I know I’ve had a cou­ple in my time that is ten­der inside and crispy out­side and I think I found the answer.

Sur La Table has a Tus­can Mat­tone 2 Piece Terra Cotta Press that looks like it could do the job with fly­ing col­ors. They even have a killer recipe that goes with.

Now, I won­der if this lit­tle lovely will help me recre­ate the Houlihan’s Rose­mary Chicken recipe… hmmmm.
