Celebrate Summer with Easy Coffee Cake Bars

My love affair with iced coffee started at an early age. I often joke that I was born with an iced coffee iv because I have been drinking iced coffee since before it was trendy. However, even though I am an avid ice coffee drinker, I cannot brew a pot of coffee to save my life. My coffee attempts can give any police station swill a run for its money. Office coffee and I also have never really gotten along. Thankfully, International Delight and I have been BFFs because there is always a bottle in the fridge for a bit of za za zu factor to tide me over until my afternoon ‘bucks run.

When I had the opportunity to try International Delight’s new Iced Coffee and use their iced coffee drink in a summer recipe, I knew that this would be a match made in heaven. I figured there’s nothing better than coffee cake to go with iced coffee and this new tried and true recipe for Coffee Cake Bars was born. These coffee cake bars are so easy to prepare that you can make them in no time and they are rich with coffee and cinnamon flavor. Next time you are craving a little sweet treat with your iced coffee, whip this up.

Easy Coffee Cake Bars

Recipe Adapted from AllRecipes

For the coffee cake:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 4 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 tablespoons of butter, cubed
  • 1/3 cup unsweetened applesauce
  • 1/2 teaspoon ground cinnamon
  • Pinch of freshly grated nutmeg
  • 1/2 cup International Delight Iced Coffee, Original Flavor
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons of butter, melted

For the topping:

  • 1/2 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • Pinch of freshly grated nutmeg

Directions:

1. Preheat the oven to 425 degrees F. Spray a square baking dish with non-stick spray and set aside.

2. Sift together the flour, baking powder, sugar and salt into a large bowl.

3. With a pastry cutter, mix in the butter until the butter resembles little peas.

4. Combine the egg, applesauce, cinnamon, nutmeg, vanilla and iced coffee in a separate bowl. Make sure the mixture is well blended.

5. Combine the wet ingredients with the dry ingredients and stir until everything is combined.

6. Pour the batter into the prepared baking pan and drizzle the melted butter over the batter.

7. In another bowl, combine the brown sugar, flour, cinnamon and nutmeg until it is well mixed. Sprinkle the cinnamon sugar topping over the cake.

8. Bake for 15 – 20 minutes.

9. Let cool slightly, cut into squares and enjoy with your favorite Iced Coffee.
