I am so excited to partner with one of my favorite brands, Sabra, to bring you an easy and chic bite that I know you are going to love – these Garlicky Grilled Veggie Mini Tarts.  Crisp phyllo tart shells are filled with Sabra Roasted Garlic Hummus and freshly grilled summer vegetables for the perfect chic appetizer that comes together in under 30 minutes.

If you open my fridge, you will see that Sabra has its own section – their deliciously creamy hummus is perfect for snacking or my secret weapon when I’m throwing something together last minute.  Their guac is to. die. for and their sandwich spreads – love love LOVE!  But, hands down, one of my absolute faves for entertaining is their classic hummus with raw crisp veggies.  It’s always a hit with friends and family and so simple to put together.

I love appetizers that come together quickly.  Sometimes when planning a soiree, I love planning the appetizers more than the actual main dish because I know my friends love a variety of delicious bites.  These Garlicky Grilled Veggie Mini Tarts will be in my entertaining repertoire for eternity.

Ever have those last minute invitations where you know you have mere minutes to whip up something and want something more than the typical crudites platter?  These mini tarts are everything and make you look like the ultimate hostess.  Just a few fresh veggies from the crisper grilled to perfect, tossed with a lemony vinaigrette and nestled in smooth creamy roasted garlic laced hummus – what’s not to love.  These bites are so scrumptious that even the pickiest vegetarian would adore these.  Better yet, you might want to make extra because they are going to disappear quick.

These Garlicky Grilled Veggie Mini Tarts are also perfect for a snack, or a few with a light salad are a delicious option for lunch.  As a matter of fact, these mini tarts are so good (and good for you) that on their own are fabulous as an unofficial meal!

Ingredients

  • 1/4 cup of extra virgin olive oil, divided
  • 2 zucchinis, sliced into large planks
  • 2 summer squash, sliced into large quarters
  • 1 large red pepper, stem and seeds removed, cut into large pieces
  • 2 green onions
  • 1/2 a lemon
  • 3 sprigs of fresh thyme, plus more for garnish1/2 teaspoon of kosher salt
  • 1/4 teaspoon of freshly cracked black pepper
  • 1 container of Sabra Roasted Garlic Hummus
  • 2 packages of Mini Phyllo Tart Shells, thawed

Instructions

  1. Heat your grill to medium high heat.
  2. Lightly brush the zucchinis, summer squash, red pepper and green onions with a bit of the extra virgin olive oil and place on the grill.
  3. Grill for about 5 – 7 minutes a side, until nicely grilled and packed with smoky flavor.
  4. Remove to a cutting board to cool.
  5. Dice the veggies and place in a medium bowl.
  6. In a small bowl, whisk 3 tablespoons of extra virgin olive oil, juice of half a lemon, 2 sprigs of thyme, the salt and pepper.
  7. Pour the olive oil mixture over the grilled veggies and toss so that the veggies are coated in the lemony oil dressing.
  8. Using a pre-baked Mini Phyllo tart, add a bit of the Sabra Roasted Garlic Humms. Top with the grilled veggie mixture. Garnish with a bit of thyme and place on a platter. Continue with the remainder of the tarts.
  9. Enjoy and I dare you to try to have just one!
