Bacon and Egg Tater Tot Casserole is the ultimate brunch comfort dish.  Studded with veggies and lots of crispy bacon, this easy breakfast casserole will be a hit with family and friends!



  1. Line a baking sheet with foil and a rack and place the bacon on the rack.
  2. Bake for about 20 – 25 minutes until crisp.
  3. Remove from oven and let cool for a bit.  Chop into bite size pieces and set aside.
  4. In a large sauté pan, add a teaspoon of olive oil.
  5. Add the onion and bell pepper.  Sauté until the onion is slightly translucent, about 6 minutes.  Add the garlic and sauté for another minute.  Add the mixture to a large bowl.
  6. Add the remaining olive oil to the pan and then the mushrooms.  Sauté for another 5 minutes until the mushrooms are brown.  Add the browned mushrooms to the bowl.
  7. To the veggie mixture, add most of the frozen tater tots, reserving some for garnish along with the reserved chopped bacon.
  8. Add the smoked mozzarella cheese and most of the parsley.  Fold all of the ingredients together and add them to an 11″ gratin baking dish sprayed with nonstick spray.
  9. In a bowl, whisk together the eggs, milk, Greek yogurt, salt, pepper and hot sauce.
  10. Pour the custard over the tater tot mixture.  Nestle the remaining tater tots in the top of the baking dish where you have room.
  11. Heat the oven to 350 degrees F.
  12. Bake for about 60 minutes, until the custard is set and the tater tots are browned.
  13. Let rest for about 7 – 10 minutes, garnish with the remaining parsley and serve.
  14. Enjoy!


If you wanted to prepare this ahead, you can do everything up to step 8, place in the fridge the night before.  Whisk up the eggs in the morning and bake until golden.
