Sheet Pan Roasted Pork Loin With Potatoes and Green Beans

1 Smithfield® Roasted Garlic and Herb Pork Loin Filet
3 tablespoons of olive oil, plus more for pan, divided
1 1/2 pounds of baby potatoes, cleaned and quartered
1 teaspoon of salt, divided
1/2 teaspoon of freshly cracked black pepper, divided
Lightly pat the Smithfield® Roasted Garlic and Herb Pork Loin Filet dry so that it roasts to a perfectly golden brown and set aside.
In a large bowl, season the quartered baby potatoes with 2 tablespoons of olive oil, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, the Adobo seasoning and the Aleppo pepper. Toss to make sure that every potato is seasoned.
Arrange the potatoes on each end of the sheet pan making sure that the potatoes have room to crisp up. Also, to achieve that golden brown flavor that everyone loves, make sure that one side is facing the edges of the pan, the other on the base – double crisp factor if possible.
Place the green beans in the bowl and season with the remaining tablespoon of olive oil, 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Toss so that all of the beans are covered with the oil and place the green beans in the center of the pan.
Nestle the Smithfield® Roasted Garlic and Herb Pork Loin Filet diagonally on top of the green beans and place in the oven for 25 minutes.
Remove the pork loin when the temperature reaches an optimal 140 degrees and cover with foil for 5 minutes while you return the veggies to the oven.
Roast the veggies for another 5 minutes so that the potatoes are golden brown and the beans are charred beautifully.
Slice the pork loin and serve with the veggies for the perfect dinner!
