Easy weeknight dinners are a favorite because nowadays, life is always so busy. It seems like it’s all about running from one place to another and overscheduling is a major issue. This year, I’ve been making more of an effort to take the time and make time for family dinner. Quick and easy one pan dinners are always a favorite, especially from the cleanup perspective. This recipe fits the bill as it roasts all on a sheet pan and is ready in no time with a perfectly seasoned pork loin filet, crispy golden potatoes and perfectly charred green beans that take on the flavors of the marinated pork that roasts above it. Easy peasy.

I headed to my local Walmart to pick up a few things for and I spotted this Smithfield® Roasted Garlic and Herb Pork Loin Filet. One of my favorite easy dinner hacks is to keep Smithfield® Marinated Fresh Pork in the fridge. They take care of all of the heavy lifting with marinating the pork to perfection and your family and friends don’t have to know that you have a kitchen helper that makes it all possible to get it on the table fast. No need to worry about putting the pork in a marinade during the morning rush or waiting an hour after you get home to let the flavor permeate – it’s already done. Smithfield® Marinated Fresh Pork comes in a variety of flavors and cuts, including Tenderloins, Loin Filets and Roasts, perfect for grilling, roasting, your Instant Pot or Slow Cooker. This sheet pan dinner recipe really couldn’t be easier to make. I tossed some gorgeous baby potatoes with a bit of Adobo seasoning and Aleppo chili for a flavorful punch that would compliment the Roasted Garlic and Herb Pork Loin Filet. Add to that some green beans that are a staple in my house seasoned with just a hint of salt and pepper and dinner was ready in no time. All you need to do is prep your veggies, toss them with a bit of oil and spices and arrange on a sheet pan. The high heat of the oven gets the veggies all golden and delicious and the flavors of the Smithfield® Marinated Fresh Pork flavor the veggies as well.

I have to confess – a couple green beans escaped the tongs as I was plating and like a radar, the Jr. Sous Pug dived in and absconded with the roasted green beans. It was a comedy of errors as I tried to get them away from him as he knows the vet will clearly not let him have it but apparently the flavor really resonated with him because the pup whined all during dinner because he could smell how awesome the dinner was.

This Roasted Garlic and Herb Pork Loin Filet will be a must keep for my house as it was so easy to make and I already have requests for it for the menu next week. Any leftovers would be scrumptious for lunch the next day, such as nestled in a spinach salad with some leftover green beans and the last of the summer tomatoes, onion and chickpeas for a Mediterranean vibe. For brunch, this pork could be made into a hash with leftover potatoes with a bit of onions and topped with a gorgeous runny egg. The options are endless.

Ingredients

1 Smithfield® Roasted Garlic and Herb Pork Loin Filet
3 tablespoons of olive oil, plus more for pan, divided
1 1/2 pounds of baby potatoes, cleaned and quartered
1 teaspoon of salt, divided
1/2 teaspoon of freshly cracked black pepper, divided
1/2 teaspoon of Adobo seasoning
1/4 teaspoon of Aleppo Pepper (optional)
1 pound of fresh green beans, cleaned and trimmed

Instructions

Heat the oven to 465 degrees F.
Brush a heavy sheet pan with olive oil.
Lightly pat the Smithfield® Roasted Garlic and Herb Pork Loin Filet dry so that it roasts to a perfectly golden brown and set aside.
In a large bowl, season the quartered baby potatoes with 2 tablespoons of olive oil, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, the Adobo seasoning and the Aleppo pepper. Toss to make sure that every potato is seasoned.
Arrange the potatoes on each end of the sheet pan making sure that the potatoes have room to crisp up. Also, to achieve that golden brown flavor that everyone loves, make sure that one side is facing the edges of the pan, the other on the base – double crisp factor if possible.
Place the green beans in the bowl and season with the remaining tablespoon of olive oil, 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Toss so that all of the beans are covered with the oil and place the green beans in the center of the pan.
Nestle the Smithfield® Roasted Garlic and Herb Pork Loin Filet diagonally on top of the green beans and place in the oven for 25 minutes.
Remove the pork loin when the temperature reaches an optimal 140 degrees and cover with foil for 5 minutes while you return the veggies to the oven.
Roast the veggies for another 5 minutes so that the potatoes are golden brown and the beans are charred beautifully.
Slice the pork loin and serve with the veggies for the perfect dinner!

This delicious Slow Cooked Leg of Lamb is made easy thanks to the slow cooker. Just a few ingredients and the slow cooker does all of the work for a scrumptious dinner!

Growing up, we didn’t often have lamb, but, when we did, my Bampa would make his famous Lamb Meatballs. Being Irish, lamb should be in the family DNA, however outside of the Lamb Meatballs or an occasional rack of lamb I’d see on a restaurant menu, my exposure to lamb was minimal.

The American Lamb Board asked us to create a global dish with their Natural American Lamb and I knew this is something my Bampa would encourage me to try. I was thrilled to learn that not only is it local and here in the states, but it’s affordable too! So, when a box arrived on the doorstep with the most perfect boneless leg of lamb, I knew that I’d draw on my Irish roots and let the lamb’s natural flavor shine through. I would accent it with root veggies, like carrots and parsnips with a bit of onion and garlic and fresh rosemary. While I originally was tempted to cook it low and slow in the oven, I decided to let my slow cooker do the heavy work and, when I got home from work, the house smelled fantastic and dinner was a home run. The lamb was tender and moist and the flavors were out of this world. If my Bampa was still here, I’m sure he would have loved this recipe! American Lamb will be on the menu more often….
