That song has been in my head for a while now thanks to Bud Light’s Lime-Ahhh-Rita’s commercial.  When I heard that they had a new flavor for fall – Bud Light Lime Apple-Ahhh-Rita’s – I knew I had to give it a try.  One thing I love about the Bud Light Lime Apple-Ahhh-Rita’s is that they make last minute entertaining a breeze.  Just whip up some easy nibbles, pour over ice and you have yourself a fabulous fiesta!  These Bud Light Lime Apple-Ahhh-Rita’s will be the star at any hayride, chat around the fire pit or even relaxing indoors while watching the fall tv show premieres.  These Bud Light Lime Apple-Ahhh-Rita’s are cool and refreshing and paired with these Cheesy Pancetta Apple Crostini, you have yourself the making of a Fall Fiesta.

I love serving crostini for parties – a chic elegant nibble that everyone loves .  These Cheesy Pancetta Apple Crostini will make your friends and family go nuts.  Inspired by this apple crostini recipe, I decided to make my spin on this to compliment the cocktail.  I tend to always have granny smith apples, pancetta and cheddar cheese on hand.  All that was needed was a bit of fresh sage, thyme and a fresh baguette and I was able to make these savory bites in no time.  Serve with some Bud Light Lime Apple-Ahhh-Rita’s garnished with a slice of apple and a sprig of thyme (or cinnamon if you are so inclined) and enjoy!

Gather your ingredients

You know the recipe is going to be good with a bit of pancetta

These Bud Light Lime Apple-Ahhh-Rita’s are cool and refreshing and paired with these Cheesy Pancetta Apple Crostini, you have yourself the making of a Fall Fiesta.

Ingredients

  • 4 ounces of pancetta, diced
  • 1 teaspoon of fresh ginger, minced
  • 1 medium shallot, minced
  • 2 large granny smith apples, peeled and diced
  • 1 teaspoon of fresh thyme leaves
  • 1/2 teaspoon of fresh minced sage
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of freshly cracked black pepper
  • 1/4 cup of maple syrup
  • 2 tablespoons of apple juice
  • 1 French baguette, sliced
  • 2 tablespoons of olive oil
  • 1 cup of shredded sharp cheddar cheese
  • Fresh thyme for garnish

Instructions

  1. Preheat the oven to 450 degrees F.
  2. In a large nonstick skillet, add the pancetta and a bit of olive oil if needed. Saute the pancetta over medium high heat until it is brown and crispy and remove the cooked pancetta to a plate lined with a paper towel.
  3. To the pancetta drippings, add the minced ginger and shallot. Cook for a minute or so and then add the diced apple
  4. Saute everything until the apples are tender and slightly browned. Add the minced thyme, sage, salt, pepper and maple syrup. Mix so that everything is coated with the maple syrup and cook for a couple minutes. Add the apple juice, cook for another minute or two and remove from the heat. Cool the mixture while you make the crostini.
  5. On a large baking sheet lined with a silpat, place the baguette slices in a single layer. Brush one side with olive oil and toast in the oven for about 4 minutes or so.
  6. Remove from the oven, flip the baguette slices to the other side, brush with olive oil and toast for another couple of minutes.
  7. Add the reserved pancetta and cheddar cheese to the apple mixture. Mix thoroughly.
  8. Top each of the baguette slices with a bit of the apple mixture. Return the baking sheet to the oven and bake for 5 minutes or until the cheese is melted.
  9. Garnish the finished crostini with a bit of thyme and enjoy!
