This St. Patrick’s Day, I’ll be simmering some Corned Beef in the slow cooker and whipping that up for a delicious feast with my favorite Loaded Smashed Red Potatoes, Honey Glazed Carrots and to go with – this Braised Sweet and Sour Red Cabbage. I first made this side dish last year after watching one of my favorite Irish chefs, Kevin Dundon, whisk this up on his PBS show, Modern Irish Chef. It was ridiculously easy to make and just took a few ingredients I already had on hand. I played with this recipe and made a few changes and have been asked already if I was serving this on St. Patrick’s Day again.
This easy cabbage recipe takes only a few minutes to prep with many ingredients you probably already have on hand. Its the perfect balance of sweet and sour with the sweetly tart apples, crisp red cabbage and a hint of orange, all married together in the oven. Added bonus – leftovers are delicious on a corned beef panini – that is if there are any leftovers – it’s that good.

Gather your ingredients
Tossing the onions with the apples, sugar and vinegar
