Entertaining A Chic Bite With Triscuit Crackers

Triscuit crackers are a pantry staple and are a perfect snack! A favorite way to top them is simple yet so flavorful and has just 3 ingredients – some tart granny smith apple, a bit of sundried tomato and creamy brie all toasted in the oven for a chic bite.

 

Triscuit Crackers With Apple Brie and Sundried Tomato

 

Ingredients:

 

    • 2 Triscuit Crackers

 

    • 2 slices of brie cheese, rind removed

 

    • 2 slices of peeled granny smith apple

 

    • 1 sundried tomato, minced

 

Directions:

 

    1. Preheat your oven to 350 degrees F.

 

    1. Line a baking sheet with silpat or parchment paper.

 

    1. Lay out the crackers in a row – leaving a bit of room should the cheese “runneth over”.

 

    1. Lay a slice of brie cheese on each (or smear – depending on how soft the cheese is)

 

    1. Nestle a small bit of sundried tomato in the brie cheese and top with a slice of granny smith apple.

 

    1. Season with a touch of fine sea salt and bake for about 5 – 7 minutes, until the cheese is melty and the apple is slightly soft.

 

    1. Enjoy!

When entertaining, I love to get creative in the kitchen. A popular treat among my friends is something with a bit of crunch. These Triscuit Crackers With Apple, Brie and Sundried Tomato are a delicious nibble to enjoy that will bring up memories of childhood but with a bit of a grownup twist.

 

Triscuit crackers are perfect on their own or with a bit of a flavor accent. Growing up, I remember my mom always had Triscuit crackers in the pantry and, for my after school snack, I would go to town topping them with various items such as a smear of Dijon mustard (don’t ask), some apples and cheese or some fresh fixings that I would find while pilfering around. It was a great nibble to enjoy while reading, studying or even watching General Hospital (hey – it was the Luke and Laura days – one HAD to watch). I even would make tiny “grilled cheeses” out of the Triscuit crackers because, heck – who can go wrong with Triscuit crackers and cheese right?

 

Lately, I have been looking to treats from my childhood that inspired me to get into the kitchen so when Triscuit challenged me to come up with a chic nibble that only had 3 ingredients, well – this was a no-brainer. If you are only using 3 flavors, you need to find some ingredients that are packed with flavor and that would accent the crunchy whole wheat Triscuit. I tossed around a few ideas like cherry preserves with a bit of thyme and salty ricotta salata, a bit of salty prosciutto with some Dijon and green onion but I kept obsessing about the apples and cheese combo and the grilled cheese factor. I adore creamy brie for entertaining and adding some flavorful sundried tomato to the mix was a great contrast for the tart granny smith apple.

 

These chic bites got rave reviews, even prompting someone to ask if I snuck some bacon into the melty cheese – nope – that was sundried tomato. All in all – this is a fabulous chic bite to serve to friends or even make for yourself when you are curling up watching the latest episode of Revenge.
